Simple Sandwich Toast

Prep Time : -

Yield : 2 servings

Ingredients:

1tsp butter
2 slices homemade raisin bread
1 chicken sausage,sliced
1tbsp shredded mozzarella cheese
Sprinkle of pork floss (optional)

2 tsbp olive oil
2 eggs
Sprinkle of Italian seasoning (optional)

2 bananas

Steps:
1) Heat 1 tsp butter in a wok under small fire. Spread the melted butter by swirling the wok.
2) Put a slice of bread into the wok. Spread sliced chicken sausage onto 1 slice of bread, then top with mozzarella cheese and another slice of bread to make a sandwich.
3) Place a ceramic bowl on top to keep the sandwich neat. After about 2-3 min, the bottom slice of bread turns brown, flip the sandwich with a spatula.
4) When the bottom slice of bread turns brown, serve by cutting the sandwich into 2. Sprinkle sandwich with pork floss and serve with sunny side up.
5) While the wok is still hot, under small fire, put 1tbsp olive oil and crack an egg onto the wok. It is important that the oil is cold to get a smooth looking egg. Close the lid, wait for 1 min, sprinkle Italian seasoning and serve. There is no need to flip the egg as the heat will be evenly distributed to 'cook' the upside of the egg when the lid is closed. Repeat with the other egg.
6) Serve with banana to make a complete meal.

2 Ingredients Sweet Potato Pancake

Ingredients:
1 small sweet potato (steamed)
1 egg
Little olive oil

Steps:
1) Mashed sweet potato, add in egg, mix till combined.
2) On low heat, heat some oil, use a table spoon, drop a spoon of batter into wok, repeat until pan is full, fry for about 1 min each side.

Golden Sponge Cake

Prep Time : 15min
Cook Time : 35min
Yield : 3-4 servings

50g unsalted butter
50g cake flour
3 egg yolks (A size)
55g milk
40g castor sugar
6g corn starch
3 egg whites (A size)

Steps:
1. Line cake pan with parchment paper (I use 8 inch pan)
2. Seperate cold eggs, set aside to room temperature.
3. Melt butter in a saucepan, remove from heat when small bubbles are seen.
4. Immediately add flour, stir quickly. Then add milk, mix well.
5. Add egg yolk, one at a time, stirring at each addition.
6. Mix sugar with corn starch.
7. Beat egg whites using electrical whisk until foamy. Add No.6 in 3 batches and beat until approaching stiff peak. Do not beat until very stiff as it would be difficult to fold into egg mixture.
8. Take 1/3 beaten egg whites and fold into egg mixture No.5 using hand whisk. Add 1/3, switch to spatula, fold until combined. Repeat with the remaining 1/3.
9. Pour into cake pan, bake in lower rack at 140 degrees for 20 min and then increase to 170 degrees for another 15 min.
10. Turn the tin upside down and cool completely. Remove by running a knife along the side and drop the cake out onto the wire rack. Put a plate onto the cake, taking the wirerack-cake-plate, overturn it so that wirerack be on top. Remove wirerack, and taadaa....a soft spongy cake to be enjoyed!

Cinnamon french toast

Ingredients:
2 eggs
1/4cup fresh milk
1/2cup castor sugar
1/2tsp cinnamon
4 slices of french bread, cut into 1 inch cubes
3tbsp unsalted butter

Steps:
1) Whisk egg and milk in a bowl.
2) Mix cinnamon and sugar in another bowl.
3) Heat butter in non-stick pan/wok.
4) Put half of the bread cubes into egg mixture, ensure each cubes are covered.
5) Transfer into wok and stir-fry with wooden spatula until sides are browned, about 3min.
6) Transfer into bowl with cinnamon mixture, mix with a spoon to ensure all sides are covered.
7) Serve.

Sour Cream Pound Cake

Ingredients:
1cup butter (or 227g) room temp
3/4cup cane sugar
1/2cup sour cream
1 1/2cup all purpose flour
1/4tsp baking soda
3 eggs (i substitute 1 egg with 1/4 fresh milk)
1/2tsp vanilla essence

Steps:
1) Pre-heat oven at 176 degrees.
2) In a mixing bowl, cream butter and sugar. I did it by cutting butter into small pieces, then mash with whisk.
3) Add sour cream, mix with whisk.
4) In a seperate bowl, sift flour and baking soda. 
5) Add 1/3 flour into butter mixture, follow by egg. Repeat until all are used. Add vanilla essence.
6) Bake for 1 hour or test with chopstick until comes out clean.

Stir-fry egg

Simple Fritatta Bread

Ingredients:
6 pcs of white bread
4 eggs
Italian herbs

Steps:
1) Pre-heat oven at 200 degrees celcius.
2) Flatten bread with a rolling pin.
3) Place flatten bread into muffin tray, press the bread to touch the muffin tray as close as possible with fingers.
4) Beat eggs, pour to fill the bread. Put Italian herbs onto the egg.
5) Pop into oven for 20min or until browned and egg is cooked.

Scrambled Egg

Ingredients:
4 eggs
2tbsp pure olive oil
Few dashes of Italian herba
Dash of pepper
Few drops of light soya sauce

Steps:
1) Heat 1 tbsp of olive oil on low heat.
2) Beat 2 eggs, add Italian herbs, pepper, soy sauce and stir until combined.
3) Pour half of the egg onto pan, pan fry for 30 seconds. 
4) Add remaining egg onto pan. Pan fry until no liquid is seen. 
5) Repeat Step 1-4 for remaining 2 eggs

Tamago Sushi

Prep Time : 15 min
Cook Time : 25 min
Yield : 2 adult servings
Freezer Friendly : No


Ingredients:
1cup Japanese short grain rice (I use Sumo Sushi Rice)
2cups water
1tbsp apple cider vinegar
3 eggs
1tbsp pure olive oil
Dash of pepper
Drops of liquid amino

Steps:
1) Rince rice once. Put rinsed rice and water into rice cooker, press 'Rice' function.
2) Beat eggs, add dash of pepper and liquid amino.
3) Heat olive oil under low heat,pour 1/4 mixture onto pan, wait for 30 seconds, fold the upper and lower edge of the egg to middle just like a tortilla wrap. 
4) Pour 1/4 mixture to empty space, touching the existing egg in the pan.
Wait for 30 seconds.
5) Repeat step 4 until mixture finish.
6) Wait until eggs are cooked through.
7) let cool and slice into tamago using sharp knife.

Raw Wheat Germ Scrambled Egg

1) Heat olive oil under low heat.

Banana Pancake (2 ingredients)

This is a very healthy treat and very easy to make with just 2 main ingredients. Results? Banana makes the pancake juicy although the natural sweetness tastes too sweet for me (I do not use to too-sweet treat) but this is good for those craving for sweet treat and even for toddler. 

Ingredients:
2 small bananas
1 egg
Little olive oil

Steps:
1) Lightly grease pan with kitchen tissue dipped in olive oil.
2) On small heat, drop 1 tbsp batter into the pan.
3) Wait for 30 seconds, try lift the pancake up, you might need a spoon to help, flip over. If not, wait for few more seconds, then flip.
4) Pancake will rise. Push the edges of pancake to touch the pan so the edges are cooked.
5) Serve.

Nian Gao

Made this again 8th February 2016, the 1st day of Chinese New Year! A warm
breakfast that cannot be missed!


Nian gao, or Chinese New Year Cake is a Chinese New Year delight which all the Chinese families would eat as it is tradiotionally believed that adults will have  good career success and children grow taller after eating it :)

It is best to have it with a cup of hot herbal tea as a good start as Chinese believe that eating a lot of fried food or crackers during Chinese New Year wil cause heatiness which will lead to health problem like sore throat and fever, and thar drinking herbal tea will neutralise the heatiness.

Ingredients: 
1/2 medium size nian gao
2 eggs, lightly beaten
6 tbsp all purpose flour
3tbsp olive oil

Steps:
1) Slice the nian gao into 6mm thick, square or triangle shapes, size is really up to you. Mine is around 6cm x 6cm
2) Cover each slice with flour. This will avoid pieces sticking together and it will taste better.
3) Heat 1 tbsp oil in non stick pan.
4) Cover the slices with egg before pan dry under medium low heat. Pan fry 6-8 slices at one time.
5) Pan fry each side for about 1 minute or until a little burnt effect on the surface. Pan dry the other side.
6) Repeat until finish.

Vegetarian Fried Rice

Ingredients:
1/2 shallot
1 1/2 cup rice, washed
1/2 cup frozen mixed vegetables
2 eggs
2tbsp grapeseed oil
Water

Steps:
1) Steamed raw rice with 1 1/2cup water for 20 min or until cooked.
2) Stir-fry shallot in oil until fragrant.
3) Add in frozen mixed vege, then cooked rice. Lastly add egg. Serve.

Family Breakfast (egg-oat-raisin bread)

Menu:
2 half-boiled eggs
2 bowls raisin oat
2 cups Nescafe 3-in-1

Half-boiled Egg Ingredients:
2 eggs at room temperature
Boiling water
Soy sauce and pepper

Steps:
1) Put water to boil in a pot.
2) Once water boiled, off fire, use a slotted spoon to put all eggs into the pot.
3) Close the lid, wait for 6 minutes.
4) Take out the egg and let it cool.
5) Crack open and serve with pepper and soy sauce (Optional)

Oats Ingredients:
4 tbsp Quaker Instant Oats
2 tbsp brown rice powder
4 tbsp raisins
Hot water as needed

Oats Steps:
1) Divide oats, raisins and brown rice powder equally into 2 bowls.
2) Pour in hot water and mix well.

Half-boiled Egg

My family loves half-boiled eggs simply because it is healthy, not-so-heavy as compared to hard-boiled eggs, warm and delicious when served with pepper and soy sauce, This is also one of the hot item on kopitiam's menu. However, it has always been a challenge to achieve the perfect half-boiled egg, i.e., egg white is not transparent while egg yolk is still runny. We have tried lots of method, put in boiling water for 3 minutes, then immediately serve etc etc, sometimes we succeed but sometimes we failed. I am glad that I came across this recipe on the website. It is literally fail-proof and I always get the perfect ones!

Ingredients:
2 eggs at room temperature
Boiling water
Soy sauce and pepper

Steps:
1) Put water to boil in a pot.
2) Once water boiled, off fire, use a slotted spoon to put all eggs into the pot.
3) Close the lid, wait for 6 minutes.

Chinese Cabbage with Egg Gravy

Ingredients:
1/3 Chinese cabbage/Napa cabbage
1 egg
3 tbsp grapeseed oil
1/2 tsp ginger powder
1/2 tsp garlic powder
1 tsp vegetarian mushroom seasoning 
powder
Few drops of Liquid Amino
Dash of pepper
2 ice cubes of chicken stock
1tbsp cornflour
Water

Steps:
1) Put the cabbage horizontal on chopping board, start cutting from the leafy side, about 2cm wide. 
2) Wash while loosen the cabbage.
3) Heat oil in non-stick wok. Add cabbage, stir-fry for 2 minutes.
4) Add a cup of water, simmer on low heat for 5 minutes.
5) Add garlic powder, ginger powder, vegetarian seasoning, Liquid Amino, pepper, chicken stock, stir-fry for 1 minutes
6) Beat egg and add to wok while stirring the gravy.
7) Mix corn flour with 3-4 tbsp water, slowly add to wok until desired consistency.
8) Off heat and serve.

Long Bean Egg Pancake

As a mom, I always scratches my head on how to sip in healthy veges and meat into my toddler's meal. It has always been a conflict where I cook the food the way they are (so she knows what she is eating but risking that she will not touch the food at all) or just "hide" the vege or meat inside the food she loves so she will eat happily without fuss. 

Today, I decided to go for way 1, cook the food the way they are. So here I go with the simple long bean egg pancake. It has always been my family favorite dish as it is really delicious and healthy.

My luck today is good, she took more than half of what I cooked without fuss, of course, I have to pretend stealing food from her container so that she thinks that the food must be very tasty, lol. The other half went to the floor when she insist going off the high chair with the container in her hand.

I am still a happy mom!

Ingredients:
1 egg
1/2 stalk long bean
1 tbsp grapeseed oil
Few drops of Liquid Amino

Steps:
1) Wash long bean and cut into thin pieces. I cut mine around 2mm to test if my girl can accept it.
2) Beat egg. Add long bean and Liquid Amino.
3) On medium low heat, heat 1 tbsp of grapeseed oil on a non-stick wok. 
4) Pour the mixture into the wok, turn heat to low.
5) When 1 side of the cake is firm (about2-3 minutes), turn to the other side. Repeat turning until the pancake is slighty golden brown colour on both side.

Rice Cooker Fried Rice

Preparation : 15 minutes
Cooking Time : 55 minutes
Yield : Serving for 1 adult and 1 toddler

Ingredients:
1 clove garlic, minced
1 shallot, minced
1 tbsp grapeseed oil
1/2 cup white rice
1/2 carrot
2 oz chicken breast meat, minced
Water as needed

Steps:

1) Steamed cut carrots for 20 minutes
2) Turn Rice Cooker onto Boiling function.
3) Pour oil, garlic and shallot, stir fry until fragrant.
4) Add rice, stir fry a while. Add water.
5) Add chicken and carrot.
6) Switch to 'Rice' function.
7) Serve when the rice is done.

My girl does not like the rice cooker fried rice during lunch as we went for outing where weather is hot. I turn it into real fried rice as follows:

Ingredients:
1 tbsp grapeseed oil
Leftover rice cooker fried rice
1 egg
Steps:
1) Pour oil on non-stick pan. 
2) Under high heat, put the rice cooker fried rice onto the pan, stir fry a while, add egg, stir fry for about 1 minute.
3) Put into thermos for dinner outing.

My girl had her portion happily :)

Cauliflower Pork and Egg Pancake

Prep Time :  10 minutes
Cook Time : 40 minutes
Yield : 2 servings

Ingredients:
2 eggs
4 florets of cauliflower
2 oz of lean pork
Few drops of Liquid Amino
Dash of pepper
Pinch of salt and sugar
Water as needed

Steps:
1) Bring 3 cups of water, pinch of salt and sugar to boil in a pot.
2) Cut cauliflower into florets, wash and blanch in the pot of boiling water for 1 minute.
3) Wash and mince the pork, marinate with few drops of Liquid Amino and dash of pepper. 
3) Steam cauliflower for 20 min, cut into tiny pieces.
5) Put steamed cauliflower, pork and egg into blender, blend until smooth.
6) On medium low heat, heat oil on non-stick wok. Turn heat to low, pour mixture into wok.
7) When 1 side is firm (about 3-4 minutes), turn to the other side. Continue turning until cooked and surface turn golden brown ( about 15 minutes)
